We’ve come across a recipe for coconut Easter nests that is a beautiful example of how healthy Easter treats can be simple to make, delicious and deeply nourishing.

Ingredients

For the nests:

  • 1 cup shredded coconut
  • 3 tbsp coconut butter or tahini
  • ¼ cup coconut oil
  • ½ cup coconut cream (additive-free)
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup (optional)

For the chocolate eggs:

  • ¼ cup raw cacao powder
  • ¼ cup maple syrup
  • ¼ cup coconut oil
  • ¼ cup cacao butter (melted)
Method
  1. Prepare the nests
    Mix coconut butter, coconut cream, vanilla, and coconut oil until smooth. Spoon into lined muffin cases and shape into nests using the back of a spoon. Sprinkle with shredded coconut.
  2. Set in the freezer
    Freeze until firm.
  3. Make the chocolate eggs
    Gently melt cacao butter, coconut oil, and maple syrup. Stir in cacao powder and pour into moulds. Freeze until set.
  4. Assemble your healthy Easter treats
    Place chocolate eggs into the nests and add optional toppings like granola or superfoods.
